ASIAN SPRING BOWL

Leading a busy life does not always leave a lot of time to prepare extensive healthy meals. Here is a super tasty recipe you can prepare in less than 30 minutes. It is also great as part of your spring detox programme.

Ingredients:

serves 2

  • 1 packet of firm or semi-firm tofu (GMO free), cut into small cubes
  • 1 clove garlic, finely chopped
  • 1 – 2 teaspoons freshly grated ginger
  • 1 – 2 tablespoons soy or Tamari sauce
  • 1 – 2 tablespoons extra virgin olive oil
  • 1 small cabbage, finely shredded
  • 1/2 onion, chopped
  • organic coconut oil and/or extra virgin olive oil
  • chopped chilli – to taste
  • 1/2 teaspoon turmeric or mild curry powder
  • Himalaya or other rock salt & pepper to taste
  • 1/4 packet of brown rice noodles

Method:

  1. Place garlic, ginger, soy sauce & olive oil in an oven proof dish, stir to mix
  2. Add tofu cubes, mix well
  3. Place in a preheated oven at 160 degrees C and bake for approx. 20 minutes, stirring once or twice
  4. In the meantime heat coconut and/or olive oil in pan or wok
  5. Add onions and stir fry briefly
  6. Add cabbage & rest of spices and stir fry for a few minutes
  7. Remove from heat
  8. Place rice noodles in just boiled water with salt, stir and let stand for 5 minutes
  9. Drain noodles, drizzle with olive oil, add some Himalaya salt, then add to cabbage & heat through
  10. Stir in tofu cubes
  11. Enjoy!
