ASIAN SPRING BOWL

Leading a busy life does not always leave a lot of time to prepare extensive healthy meals. Here is a super tasty recipe you can prepare in less than 30 minutes. It is also great as part of your spring detox programme.
Ingredients:
serves 2
- 1 packet of firm or semi-firm tofu (GMO free), cut into small cubes
- 1 clove garlic, finely chopped
- 1 – 2 teaspoons freshly grated ginger
- 1 – 2 tablespoons soy or Tamari sauce
- 1 – 2 tablespoons extra virgin olive oil
- 1 small cabbage, finely shredded
- 1/2 onion, chopped
- organic coconut oil and/or extra virgin olive oil
- chopped chilli – to taste
- 1/2 teaspoon turmeric or mild curry powder
- Himalaya or other rock salt & pepper to taste
- 1/4 packet of brown rice noodles
Method:
- Place garlic, ginger, soy sauce & olive oil in an oven proof dish, stir to mix
- Add tofu cubes, mix well
- Place in a preheated oven at 160 degrees C and bake for approx. 20 minutes, stirring once or twice
- In the meantime heat coconut and/or olive oil in pan or wok
- Add onions and stir fry briefly
- Add cabbage & rest of spices and stir fry for a few minutes
- Remove from heat
- Place rice noodles in just boiled water with salt, stir and let stand for 5 minutes
- Drain noodles, drizzle with olive oil, add some Himalaya salt, then add to cabbage & heat through
- Stir in tofu cubes
- Enjoy!
