CHOCOLATE PEANUT BUTTER BARS – the healthy alternative

If you like Reese’s chocolate peanut butter cups as much as I do, then I have good news for you: here is a super quick and healthy alternative that tastes at least as good without the harmful ingredients.
Ingredients:
for the peanut butter base:
- 1 cup graham cracker crumbs (I used rye vita crisp bread – 100 % rye)
- 8 Tablespoons butter or organic coconut oil – melted (I used coconut oil)
- 1 cup icing sugar (I used half organic coconut blossom sugar and half erythritol)
- 1 cup plus 2 Tablespoons peanut butter (unsweetened, unsalted, either smooth or crunchy)
for the chocolate topping:
- 1 cup organic, raw cacao paste
- 1/4 cup organic coconut oil
- 1/4 cup raw honey
- 1 teaspoon natural vanilla powder or paste
- 1/2 teaspoon Himalaya or other healthy salt
- 1 tablespoon organic, raw cacao butter (optional)
- 1 tablespoon organic, raw cacao powder (optional)
Method:
- grind crackers in blender into fine crumbs
- In a bowl combine all ingredients for the base
- Spread into baking tin and place in fridge whilst you make the topping
- Combine all topping ingredients in a double boiler and melt on low heat (don’t let it get too hot, you should still be able to stick a finger into it without burning yourself)
- Pour over peanut butter base
- Leave in freezer (faster) or in fridge (slower) until set
- Cut into bars and store in a container in fridge or freezer.
