Marion’s Spicy Mango Soup
I just got this recipe from my friend Marion and made it today for supper and served it with a slice of gluten free foccaccia with herbs and olives on the side – it is delicious and so quick and easy to prepare. Freeze peeled, cut up mangoes when in season and cheap, then you can prepare this healthy ‘fast food’ when short of time any time during the year.
Ingredients:
- 1 large mango, peeled, stone removed
- 1/2 onion
- 1 cup iced , filtered water (or more, depending on how liquid you want the soup)
- 1 – 2 small red or yellow peppers
- 1 carrot (if you don’t have peppers, use 2 carrots)
- 2 cm piece of ginger – add more if you like a stronger ginger taste
- juice of a lime or lemon
- Himalaya salt to taste
- 1 small red chilli, seeds removed – optional
- 1 tablespoon olive oil
- fresh or frozen coriander leaves to garnish
Method:
- Place all ingredients except coriander in a blender (or use a stick blender) – blend till smooth
- Adjust seasoning
- Pour into soup bowls and sprinkle with chopped coriander leaves
- Serve chilled
