Spinach or Kale Chips (raw, dehydrated, very moorish)

This recipe is really easy and tastes so good, that I could  eat a whole bunch of spinach, kale or Swiss chard in this form all at once. You can buy this as a ready made snack in some health shops or vegan restaurants, however it is expensive. Making it yourself is simple and much more economical. If you grow your own spinach as well, then this is an added bonus. And of course living in Johannesburg, South Africa, we get so much sunshine, that you don’t even need a dehydrator – just place the trays outside for a few hours.

Nutritional yeast is very high in B vitamins and tasty at the same time, but you can also use other spices – experiment and ring the changes by adding eg: cayenne pepper, chilli powder, minced garlic, nutmeg, herbal salt …

Ingredients

  • 1 big bunch of organic spinach, kale or Swiss chard – washed, torn into bite size pieces, stems removed
  • 1/3 cup of nutritional yeast flakes
  • 2 teaspoons Himalaya salt (or to taste)
  • 2 tablespoons cold pressed, extra virgin olive oil

Method

  1. In a large bowl combine salt, oil & nutritional yeast
  2. add torn leaves
  3. mix well, using  your hands, so all the leaves are coated
  4. spread leaves out on baking trays, cover with netting and place in the sun for several hours; if the leaves are not crisp and dry when the sun goes down, finish off in a very low oven (under 50 degrees); alternatively spread over dehydrator sheets and dehydrate for several hours until crisp and dry; you might have to move the leaves around and separate and turn them during the drying period – check a few times
  5. store in an airtight container – chances are you won’t need to store them for long, as it is difficult to stop once you start eating these chips
