NAPOLI SAUCE

A delicious and very versatile sauce that can be used over pasta, various vegetable dishes, on a pizza base, thinned down as a soup …. in one word in any recipe where a hearty tomato sauce is required. I recently made this wonderfully refreshing drink as a pre-dinner drink on one of the first warm spring evenings of the season. This recipe is super quick if you have a power blender or good food processor. You can shape it into balls or press it into a baking tray and cut it into squares or bars once set. These crackers are dead easy to prepare without any equipment and are a great stand-by for those snack attacks. They are delicious on their own, but also go with dips, humus, vegan cheeses,  as an accompaniment to soups or salads, cheeses and even with sweet toppings. I discovered this recipe  in a health magazine. It took me all of 10 minutes to make, and after 2 hours in the freezer, the chocolates were ready to eat, although it was just as delicious to lick the bowl! Double (or triple) the quantity to have extra. You need to serve and eat them straight from the freezer, as they go soft quickly when left outside.
